Oatmeal Protein Pancakes
 
Got this recipe from a sister-in-law who is a personal trainer.  I made a few changes--I've also seen a similar recipe on BodyBuilding.com.
1/3 cup regular oats
1/3 cup fat free cottage cheese
2 egg whites
1 Tbs fat free milk
1 tsp baking powder
dash each vanilla and cinnamon
Mix together in Magic Bullet or other food processor.  Cook on medium-high heat for about one minute each side.  Serve with fresh pureed strawberries, blueberries, or other fruit.  Or some peanut butter.  Or about a tablespoon of jam.  Makes 3-4 pancakes.  Store well in fridge.
Two pancakes contain 1 gram fat, 10.42 grams carbohydrate, 11.17 grams protein
